it takes a wile...if you are good you can do it in a day....but if you are real good...took me a few weeks to rebuild my 3.0....but i didnt do rings....just main bearings. if you take your time and read the book and fallow it to the letter...and talk with people... you will be fine

what kind of smoke? black, blue, white?

Black - Rich mixture/incomplete burn/bad spark
Blue - Oil. Rings/valve seals.
White - Coolant. Water getting into the cylinder somehow.

That is just generalized. Some engines have their quirks and do things a little outside the norm. Someone with more experience with the 2.8 will surely chime in and correct me.

When you provide more specifics as to the color, things can be narrowed down more.

As stegomon states. Rebuilds can be anywhere from a day to infinity. Attention to detail, following instructions, using your head, and listening to what people tell you are all key factors. As it is your daily driver and you've never done it before, I wouldn't plan to do it over the weekend without some very experienced help, and even then you'd be pushing it.

It's seemingly always my experience that a job costs twice as much as I plan, plus at least one tank of gas going to the parts store. Then again, I am sometimes disorganized.

It would be just shy of a full tear down to get to the rings. Then measuring the bore, buying the appropriate rings(and pistons if the bore is too far over for standard).

Has the engine been left sitting for a long period of time?

Prior to assuming it is the rings, something I've learned about these 2.8's from reading here is that they have valve seal issues.

See http://www.therangerstation.com/tech_library/2-8_valve-seal.html for replacement instructions.

The smoke is the valve seals, 2.8s have rubber seals that breakdown overtime letting oil drip into the pistons
That post is gramato-physically impossible.

The oil is either dripping ONTO the piston or "into" the CYLINDER.

If all it is doing is smoking just change the valve seals you can do that without pulling the heads. Use air pressure to hold the valves in put each piston on TDC on the compression stroke and put around 20lbs pressure so it dont push the piston down. I bought a palm spring compressor on it done in about 2 hours. Adjust the valve lash and dont tighten the valve covers all the way down just snug them then do a complete warm up cycle and after the engine cools all the way down you can final the valve lash and button it up. If there is no reason to rebuild the engine poor compression or low oil pressure just pull the intake manifold and reseal the upper end where it always leaks oil between the heads and block in the valleys the oring on the dizzy and valve guide seals. Put new valve cover gaskets and that engine should have 200,000 left on it. You can do a complete rebuild but if the emissions are messed up it would be all for not.
